I hope you're all having a wonderful week and are as excited as I am for the weekend! I was working all last weekend on a few makeup jobs, and I am excited to be off the next 2 days!
Now, let’s dive into this week’s Substack! I wanted to share my go-to Chicken Salad with you all. As I’ve mentioned before, I love to meal prep on Sundays, and this salad is one of my staples. It’s super convenient because I can make it ahead of time, and it stays fresh in the fridge for a few days. I enjoy it for lunch with some sourdough bread, crackers, or sometimes I wrap it in lettuce if I’m cutting out carbs. My son also loves it for school lunches! It’s so easy to make, and to simplify things even further, I usually grab a rotisserie chicken from the store.
Ingredients:
1 whole rotisserie chicken (around 3-4 lbs)
Soy sauce – 1/4 cup
Olive oil – 2 tbsp
Sesame oil – 1 tbsp
Sriracha – 1-2 tbsp (depending on your spice preference)
Celery – 2-3 stalks, thinly sliced
Green onions – 4-5, chopped
Sesame seeds – 1-2 tbsp (lightly toasted for extra flavor)
Dried seaweed paper – 2-3 sheets, torn or cut into strips
Pickles – 1/4-1/2 cup, thinly sliced
Instructions:
Rotisserie Chicken ( I get mine at Gelson’s )
Shred the chicken: Once the chicken is cool enough to handle, shred it into bite-sized pieces.
Mix the dressing: In a small bowl, combine soy sauce, olive oil, sesame oil, and sriracha. Adjust the sriracha based on your heat preference.
Assemble the salad: In a large mixing bowl, combine the shredded chicken, celery, green onions, sesame seeds, dried seaweed, and pickles.
Dress the salad: Pour the dressing over the salad ingredients and toss gently to combine.
You can always tweak the soy sauce, sesame oil, and sriracha for the flavor balance you prefer!
